Oh boy. Am I crazy to follow up a month of cocktails with... salads?
I'm the first to admit I have a solid love for junk food and healthy food. Different days, different moods, different occasions call for moderation of both.
I will not deem the cocktails of April healthy so time to switch it up for May.
Any one else out there packing lunches for work? Or even scrounging for lunches to make at home? Enter salads.
First up, a classic with a twist. Kale caesar salad with tomatoes instead of croutons, shredded parmesan cheese and caesar dressing.
Regular caesar salads grew incredibly dull for me quick and the simple change to kale instead of romaine brought me back. The combo is perfect. Add chicken if you have it on hand and you're not vegetarian!
This time of year, kale is plentiful in WNC from local farms. Each of the salads I share in May will have a North Carolina touch.
